Fall Cocktails with Callisto

February 15, 2021

It’s that time of year. It’s time to cozy up with a cocktail and watch the leaves fall. Who else gets excited about the changing of seasons?

We’ve rounded up a few of our favorite Fall cocktails to get you in the mood for the changing seasons and weather the short days and long nights a little more easily.

Apple Cinnamon Sipper by @Tending Natural

1 1/2  oz Callisto rum

1/2  Small apple (muddled) OR 1.5 oz apple juice

3/4  oz Maple syrup

1/4 oz Lemon juice

Tiny pinch of cinnamon powder

Soda water

Cinnamon stick for garnish

Combine rum, muddled apple/apple juice, lemon juice, maple syrup, and cinnamon powder in a shaker with ice. Shake and strain over a glass filled with ice. Fill with soda water and garnish with a cinnamon stick, sit back and enjoy.

Halloween Candy by Risa James Photography

1 1/2  oz Callisto rum

3/4  oz Martinelli’s apple cider

1/4  – 3/4  oz. Candy corn syrup

1/2  oz Cinnamon-clove syrup

1/4  oz Lemon juice

1 Egg white

Combine all ingredients in a shaker with one large ice cube. Shake hard for 90 seconds, then strain into a rocks glass over a fresh large ice cube. While the foam rises, slice an apple cross-wise, carve out a silver-dollar sized centerpiece, sprinkle with cinnamon, and place gently on top of the foam.

How to make the syrups? Not to worry, Risa walks through the process for making the flavored syrups. For corn syrup, place 10 candy corns in a heat-proof bowl. Cover with 2 tablespoons boiling water and let sit for a few minutes. Use the tines of a fork to crush the candy corn into bits. Microwave for 30 seconds to dissolve remaining bits. Allow to cool and thicken.

To make cinnamon-clove syrup, add 1 cup hot water to 1 cup granulated sugar and stir to dissolve. Place 2 cinnamon sticks and 10 whole cloves in syrup and let steep for 30 minutes. Remove solids before storing them in a glass bottle in the fridge.

The sun is setting earlier, but it doesn’t make it any less beautiful. With the longer nights, it’s important to get your daily dose of vitamins. And what better way to do that than through a cocktail. But we’re not doctors here, so don’t take our word for it, but a Callisto Sunset a day will keep the doctor away.

Callisto Sunset

3 oz Callisto Rum

12 oz of Orange juice (the fresher, the better)

1/5 oz of Grenadine syrup

Shake the Callisto and Orange Juice well with crushed ice. Strain into a chilled cocktail glass. Add grenadine and stir gently. Garnish with an orange slice and a maraschino cherry. Sip and watch the sunset, way too early, but not too early for a drink and get that vitamin C.

While these cocktails are inspired by our favorite season, Fall, that doesn’t mean you can’t enjoy them all year round. It’s kind of like putting the Christmas tree up early, an opportunity to embrace the joy a little bit longer. Whip up your favorite Fall cocktail with Callisto and don’t forget to tag us on Instagram!
